Caramelized Carrots with Thyme and Butter Sauce

After a while, vegetable sides need an update.  Who likes to eat carrots, peas, and green beans the same way each time they are made?  No one, that is who.  I know from a chef’s point of view, I certainly get tired of making them the same way each day. 

Making the simplest of adjustments, means an entire new flavor profile.  Thus, increasing the enjoyment factor by multitudes.  So switch things up from time to time.  Your friends, family and guests will appreciate it, that is for sure.


  • 1 Bag Baby Carrots
  • 3 Tbs. Dried Thyme
  • 4 Tbs. Butter, Salted


  1. In a medium sauce pan, melt your butter over medium heat.  Once melted, reduce heat to medium-low and add your carrots and dried thyme.
  2. Cook for about 15 minutes, stirring occasionally, until just starting to caramelize and are tender.
  3. Serve this amazing side dish with Chicken or Fish for best results.
  4. Watch your guest enjoy and ask for the recipe.
